Ingredients
  • 3 tbsp olive oil
  • 8 large eggs beaten
  • 0.5 cup milk
  • 0.5 bunch asparagus
  • 0.5 cup goat cheese crumbled
  • 1 salt & pepper to taste

Instructions
  1. Preheat oven to 400°
  2. Season asparagus with olive oil, salt, and pepper. Roast for 10 minutes.
  3. Mix together your eggs, milk, salt and pepper. Add a little olive oil to your tart shells. Fill the shells with your egg mixture.
  4. Slice your asparagus to thin ribbons. This will help create the pretty spirals in your frittata.
  5. Add goat cheese between each piece of asparagus.
  6. Bake for 5 to 10 minutes. They will puff up like a souffle and turn a beautiful golden brown.
