Ingredients
Purple Sweet Potato Gnocchi
  • 2 lb purple sweet potato
  • 1/4 cup ricotta
  • 1 1/2 cup all purposeĀ Flour
  • 1 egg beaten
  • 1 Tbsp salt
  • 1/2 cup semolina flour for dusting the gnocchi
Citrus Beurre Blanc
  • 8 Tbsp butter chilled and cubed
  • 1/2 tsp vegetable oil
  • 8 fresh sage leaves
  • 1 Lemon juiced
  • 1/2 cup Parmesan cheese

Sweet Potato Gnocchi
  1. Preheat oven to 400F. Bake sweet potatoes for 1 hour or just until tender. Cut sweet potatoes in half. Mash sweet potatoes or run sweet potato through ricer for a smoother consistency.
  2. On a clean countertop add the flour and salt and make a mound. Hollow out the flour and add sweet potato, ricotta, and egg.
  3. Knead for 3-5 minutes. Do not over work the dough this will make the gnocchi have a gluelike texture.
  4. Cut the dough into 6 pieces. Gently roll each piece starting from the middle and working your way out. You will roll into a long rope.
  5. Cut each piece into 1 inch pieces. Gently pinch each side to create a "pillow". Roll into semolina flour
  6. In a medium pot bring 1 quart of water to a boil. Add 10-15 gnocchi at a time. They will float to the top once cooked through. 2-4 minutes. Remove with a slotted spoon and set aside.
Citrus Beurre Blanc
  1. While your gnocchi is cooking get your sauce ready. Use a medium sauce pan and heat on a medium to medium high temperature. Add 4 Tablespoons butter, vegetable oil, and 4 sage leaves. Adding the vegetable oil prevents milk solids from burning. You are looking to achieve a toasted brown color, this is the milk solids cooking. Lower the flame and add the cooked gnocchi and a couple of tablespoons of cooked gnocchi water to create a creamy sauce.
  2. Add lemon juice, salt and pepper and parmesan cheese. Give the gnocchi a nice toss. Add to a bowl and garnish with some fresh sage.
