Ingredients
  • 4 eggs
  • 2 tsp ground turmeric or 2 fresh turmeric grated
  • 2 tsp distilled vinegar

Instructions
  1. In a medium sauce pan fill halfway with water and bring to a boil. Reduce heat to a simmer; stir in vinegar and turmeric. Before adding eggs to the swirling water, it's important to create a whirlpool motion to the water. Crack 1 egg at a time into a small bowl, and gently slide egg into swirling water.
  2. Gently move your spoon in a circular motion to help the egg whites come together. Repeat with remaining egg. Cook for about 3 minutes.
  3. Using a slotted spoon, transfer eggs to an ice bath to stop cooking process. Hold until ready to serve.
  4. Reheat in a small pot of simmering water. with a slotted spoon remove and blot with a paper towel-lined plate. Serve on risotto, toast, english muffins.
