This red beet hummus is one of my favorites to make for a small family gathering. I recently made this for a dinner party with a few of our neighbors. They ate it up so fast, I barely got a bite!

What I love about this hummus is that incorporates on of my favorite vegetables into a delicious dip. Olivia especially loves dipping small carrot sticks into the dip.

One thing that makes this hummus different than other hummus recipes is that I use to chickpea liquid to add a nice depth of flavor as well as a great way to make the hummus extra smooth. This liquid, known as aqua faba, is turning out to be a Vegan powerhouse. Did you know you can make meringue cookies with it?
